- This dramatic limestone ridge acts as a natural wind barrier against harsh northern air. It creates a thermal inversion where warm air is trapped and driven back down the slopes toward the lake. The escarpment features nutrient-rich, dolomitic limestone soils that yield bold, highly structured red and white wines.

Niagara Ice Wine & Signature Grapes
Ice wine (or Eiswein) is a rare, intensely sweet dessert wine made from grapes left on the vine to freeze naturally. During winter, the water inside the grapes freezes. When pressed, the ice crystals are left behind, producing a highly concentrated, syrupy nectar balancing bright acidity with rich tropical or stone fruit flavors.
Signature Grapes
- Vidal Blanc: A hardy French-American hybrid grape that thrives in the cold. Because it has a thick skin, it resists splitting during winter and yields robust, honeyed, and apricot-forward ice wine.
- Riesling: A classic cool-climate grape prized for its naturally high acidity. Riesling ice wines are incredibly well-balanced and age beautifully, offering bright notes of lemon, lime, and peach.
Harvest Process
- Under Vintners Quality Alliance (VQA) standards, the harvest is a race against time.
- The Wait: Grapes hang unharvested into late autumn and early winter. Netting is often used to prevent bird predation.
- The Freeze: The harvest only begins when temperatures drop to at least -8°C (approx. 17.6°F).
- The Pick & Press: Grapes are usually hand-picked at night or early in the morning and pressed while still frozen. Yields are only 10% to 15% of a regular harvest.
- Because the production is labor-intensive and weather-dependent, ice wines are sold in 375ml (half-bottles).
- Vidal Blanc: Ranges from $40 to $70 per bottle.
- Riesling: Generally commands a premium, often ranging from $60 to $100+ per bottle.
