Shrimp Scorpio
The spotlight here is on a single, flavorful Greek-inspired dish: Shrimp Scorpio.
Shrimp Scorpio is a Mediterranean-style recipe that combines tangy tomatoes, aromatic herbs, and creamy feta for a vibrant meal ready in
under an hour. It starts with sautéing onions (or scallions) in olive oil, then layering in garlic, parsley, optional dill,
dry mustard, sugar, chopped tomatoes, and tomato sauce to create a rich, simmering base.
Once the sauce has cooked down for about 30 minutes, add peeled and deveined raw shrimp, transfer to a casserole dish, top with crumbled
feta, and bake at 425°F for 10-15 minutes until the cheese melts.
This serves four and can be adapted by swapping feta for mozzarella (just add salt to taste).
The prep is minimal—no fancy techniques required—and it uses pantry staples alongside fresh shrimp.
It’s perfect for a weeknight dinner or impressing guests with its bold Greek flavors, evoking the sunny shores of the Aegean without
hours in the kitchen.
