Sweet & Sour Pork Chops
Ingredients
6 thin sliced sirloin pork chops
1 (13 1/2 oz) can pineapple chunks (with juice)
1 cup green pepper chunks
1 cup chicken broth
Hot cooked rice (for serving)
1/3 cup water
1/2 cup sliced onion
1/4 cup brown sugar
1/4 cup vinegar
2 tablespoons soy sauce
1/2 teaspoon salt
3 tablespoons cornstarch
Instructions
Pan-fry pork chops until golden brown.
Combine pineapple (with juice), green pepper, chicken broth, onion, brown sugar, vinegar, soy sauce, and salt.
Add mixture to chops. Cover and simmer 15 minutes.
Remove chops and place over hot cooked rice.
Stir cornstarch with water until smooth. Add to sauce mixture and cook, stirring, until thickened.
Pour sauce over chops and rice.
Pork Chops with Celery Soup
Ingredients
5 or 6 pork chops (about 1/2 inch thick)
1 can cream of celery soup
1 cup water
Baked potatoes (for serving)
Instructions
Brown pork chops in a skillet.
Pour cream of celery soup over chops and add 1 cup water.
Reduce heat to low and simmer about 45 minutes.
Serve with baked potatoes and spoon the soup gravy over top.
Total cooking time is about 1 hour. Serves 4.
Pork Chops Rice Bake
Ingredients
1 cup uncooked rice
6 pork chops (1 to 1 1/2 inches thick)
2 tablespoons oil
1 can condensed onion soup
1/2 cup water
Preheat oven 350 degrees
Instructions
Preheat oven to 350°F.
Spread uncooked rice in the bottom of a large baking dish.
Brown pork chops in 2 tablespoons oil; drain.
Place chops on top of the rice.
Combine 1 can condensed onion soup with 1/2 cup water. Pour over chops and rice.
Cover tightly with foil and bake 45 minutes to 1 hour, until tender.
Remove foil and bake 10 minutes longer, or until excess liquid evaporates.
Serves 6.

Which recipe is best if I want gravy?
Pork Chops with Celery Soup is the easiest “gravy-style” option, since the soup becomes the sauce for potatoes.
Do I need thick or thin pork chops?
The Sweet & Sour recipe uses thin-sliced chops, while the Rice Bake calls for thicker chops (about 1 to 1 1/2 inches).
Can I make any of these ahead of time?
The Sweet & Sour sauce and the Celery Soup chops reheat well. For the Rice Bake, leftovers are best reheated covered so the rice stays moist.
