Ginger Chicken Salad Recipe
Soy Ginger chicken salad with apples

Ingredients requiredMarinade:
1/2 cup soy sauce
1 teaspoon Worcestershire sauce
2 tablespoons brown sugar
Three garlic cloves, minced
1/4 cup vegetable oil
6-8 boneless chicken thighs
Salad:
6 cups salad greens
One and the apple, diced
One Red Bull pepper, diced
One avocado, diced
Goat cheese, crumbled
Almonds, toasted
Dressing:
1/4 cup Basamic or apple cider vinegar
1/2 cup olive oil oil
1 teaspoon Dijon mustard
1 teaspoon honey
1 tablespoon orange or lemon juice
Salt and pepper
Instructions for Soy Ginger chicken salad recipe with apples
Prepare the marinade in a small bowl, whisk marinade ingredients until sugar is dissolved.
Place chicken in a resealable bag or shallow dish, cover with marinade, then seal or cover. Refrigerate for at least 30 minutes, 2 to 4 hours is preferable.
Grill or baked chicken until internal temperature reaches 165°F. Chopped into bite-size pieces.
Prepare the salad. In a large bowl, combine salad ingredients.
Prepare the dressing. Whisk dressing ingredients in a small bowl.
Tossed salad, ingredients, chicken and dressing.
Makes four servings.
