Ingredients

  • ¼ cup cake flour
  • 2 tablespoons sugar
  • 1 tablespoon cornstarch
  • Dash of salt
  • 2 tablespoons cooking oil
  • 1 egg white
  • 1 tablespoon water
  • Fortune messages (on small slips of paper)

Preparation Instructions

  1. Prepare Fortunes: Write your short, customized messages on small slips of paper ahead of time and set them aside.
  2. Sift Dry Ingredients: Sift together the cake flour, sugar, cornstarch, and a dash of salt into a medium mixing bowl.
  3. Blend the Batter: Stir the cooking oil and egg white into the dry ingredients until perfectly smooth. Add the water and mix thoroughly to finish the thin batter.
  4. Cook Individually: Cook one cookie at a time. Pour 1 tablespoon of batter onto a lightly greased skillet or griddle over low heat, spreading it into a thin 3½-inch circle. Cook for about 4 minutes until lightly browned, then flip and cook for 1 additional minute.
  5. Shape Quickly: Working very quickly while the cookie is hot, place it on an oven mitt. Drop a fortune slip into the center, fold the round in half, and then fold it backward over the rim of a bowl or cup to achieve the signature shape. Place the cookie in a muffin tin slot or small cup to hold its shape until cool and crisp.
