Rose Strawberry Jello Salad
Ingredients
2 (3 oz) packages strawberry gelatin
1 1/2 cups boiling water
1 1/2 cups rosé wine
2 (10 oz) packages frozen strawberries
1 (8 oz) can crushed pineapple, drained
1 cup sour cream
2 (3 oz) packages cream cheese
Instructions
Dissolve gelatin in boiling water.
Stir in rosé wine, strawberries, and drained pineapple.
Refrigerate until partially set.
Mix sour cream with cream cheese until smooth. Spread over half the strawberry mixture.
Pour remaining strawberry gelatin mixture over the top. Refrigerate until serving. Serves 8.
Cranberry Jello Mold Salad
Ingredients
1 large package raspberry gelatin
Hot water (amount called for on package)
12 oz pineapple juice, chilled (use in place of cold water)
1 large can whole cranberries
3 cups apples, chopped
1/2 cup celery, finely chopped
1 cup walnuts, chopped
Instructions
Dissolve gelatin in the hot water called for on the package.
Stir in whole cranberries.
Use chilled pineapple juice in place of the cold water; mix well.
Let partially set, then fold in apples, walnuts, and celery.
Chill until firm.
Pineapple Jello Mold Salad
Ingredients
1 large package gelatin (peach, orange, or apricot)
1 cup boiling water
1 teaspoon vanilla
Dash of salt
8 oz cream cheese, softened
1 large container Cool Whip (divided)
1 No. 2 can crushed pineapple, undrained
1/2 cup pecans, chopped
Instructions
Dissolve gelatin in boiling water. Stir in vanilla and salt.
Chill until not quite set, then beat until foamy.
Beat in softened cream cheese, 1/2 the Cool Whip, and undrained pineapple. Mix thoroughly.
Fold in pecans. Pour into a mold or cake pan.
Chill until firm. Top with remaining Cool Whip. Serves 15.
Strawberry Jello Salad
Ingredients
2 small packages strawberry gelatin
1 cup boiling water
1 can crushed pineapple, drained
1 package frozen strawberries, thawed
1 cup nuts, chopped
2 medium bananas, mashed
1/2 cup coconut (more if desired)
1/2 pint sour cream or whipped cream, whipped
Instructions
Mix boiling water and gelatin until dissolved.
Stir in pineapple, strawberries, nuts, mashed bananas, and coconut.
Pour half into a 13×9-inch pan and refrigerate until firm.
Keep remaining half at room temperature.
Spread sour cream (or whipped cream) over the firm layer, then gently spread the remaining gelatin mixture on top.
Chill and serve. Serves 6–8.
Orange Jello Salad
Ingredients
2 small packages orange gelatin
1 cup water
1 pint orange sherbet
1 can mandarin oranges, drained
1/2 pint whipping cream, whipped
Instructions
Dissolve gelatin in water.
Stir in orange sherbet.
When partially set, fold in drained mandarin oranges and whipped cream.
Chill until firm. Serves 6–8.
Rose Strawberry Ring
Ingredients
1 (3 oz) package strawberry gelatin
2 cups boiling water
2 (10 oz) packages frozen sliced strawberries
1 (13 1/2 oz) can crushed pineapple
2 large ripe bananas, finely diced
2 tablespoons lemon juice
Sour Cream Dressing:
1 cup sour cream
1 teaspoon sugar
1/4 teaspoon ground ginger
Dash of salt
Instructions
Dissolve gelatin in boiling water.
Add strawberries, stirring occasionally until thawed.
Stir in pineapple, diced banana, and lemon juice.
Pour into a 6 1/2-cup mold. Chill until firm (about 5–6 hours).
Mix sour cream, sugar, ginger, and salt. Chill well.
Serve gelatin ring with the sour cream dressing. Serves 8.
Jello Mold
Ingredients
1 package lemon gelatin
1 package lime gelatin
1 cup miniature marshmallows
1 small carton cottage cheese
1 small container Cool Whip
1 cup crushed pineapple
Optional: chopped cherries (for color)
Instructions
Prepare lemon and lime gelatin in shallow pans. Chill until set.
Cut set gelatin into small squares.
Mix cottage cheese with Cool Whip, crushed pineapple, and marshmallows.
Fold in gelatin squares last, mixing lightly.
Serve on crisp lettuce (optional). Serves about 8.
FAQ
How far ahead can I make Jello salad?
Most Jello salads are best made the day before so they fully set and flavors blend.
When should I add bananas or whipped topping?
Add bananas close to serving to prevent browning. Fold in whipped topping after the mixture is partially set (as directed) so it stays fluffy.
Why didn’t my Jello set?
Warm fruit, extra liquid, or adding ingredients too early can slow setting. Chill longer, and follow the “partially set” step before mixing add-ins.
Can I use fresh pineapple?
Use canned pineapple for best results. Fresh pineapple can prevent gelatin from setting.
